Baking & Cake Decorating Courses
Whether you’re looking to start a cake decorating business or just make cakes for family and friends, our cake decorating classes will teach you all you need to know to turn out professionally decorated cakes. You’ll develop techniques practiced by professional cake decorators such as applying buttercream icing, how to make a rose, level a cake, pour ganache and master a piping bag. From breathtaking designs to whimsy, all the latest cake decorating trends are disclosed, with instructions and ideas about how to bake and decorate the darlings of the cake world, finger licking cupcakes.
With practice and patience, cake decorating can be learned. This exclusive course starts you out with the basics from designing your work space, cake baking, decorating tools, prepping a cake for decorating and many tips of the trade to help you create delectable cakes, icings and fillings. You’ll learn the importance of texture and the temperament of icings, how to avoid cake catastrophes, ways to fix them and still keep your cake looking perfect.

Whether you’re looking to make a serious career commitment in the field of baking and cake decorating, or you’re ready to take your favorite hobby to the absolute highest level, then this incredible course is the logical next step for you!
Here’s a glimpse of what the course curriculum includes:
- You’ll learn to bake perfect cakes that will be the foundation for your decorating.
- You’ll master every skill you need to complete 11 delightful projects covering novelty cakes, flowers, icings, cake assembly, tiered cakes, borders, layer cakes, tiered cake construction, buttercreams, and more.
- You’ll master various buttercreams, whipped creams and royal icings then pair them with layer cakes that form the backbone of the American Style of cake baking and decorating.
- You’ll have practical knowledge of the baking and cake decorating business that you can use immediately.
- You’ll be amazed at how you can fluently speak the language of baking and cake decorating.
- You’ll earn a Certificate of Completion so you can share your accomplishments with employers, family and friends.
- You’ll be ready to get a great job with an employer-ready resume and portfolio.
Student responsibilities (not covered by the class fee)
- Students will be given a list of supplies and equipment to purchase. All equipment that each student purchases for the Cake Decorating Course can also be used for future Cake Decorating Courses that will be offer.
- Students are expected to bring the required cakes and icings to complete each project.
- There will be no make-up days as we have much to cover within each session. If a student requires makeup hours, there will be additional fees.
- Students are expected to come dressed as discussed at the first-class meeting. The dress is for safety, industry standard and personal hygiene.

If it is less than 2 weeks before your class and you find that you cannot attend, you can have someone attend in your place, however your option to receive a refund, to reschedule, or receive a class credit will be forfeited. If you purchase the class within the two-week window, the sale is final, and your reservation cannot be rescheduled or refunded. For all series classes, once the series has started, no refunds or class credits are available.

We cannot issue refunds for gift certificates or bookings made with gift certificates. If you cancel a class booked with a gift certificate, you will receive a class credit in the form of a new gift certificate so that you can book a future class.
We reserve the right to cancel or postpone any class or series. If a class gets cancelled, we will contact you via the email address that was provided when you registered for the class and give you the option available for refund or credit.
- Classes or series cancelled due to low enrollment will be eligible for a refund or credit. You have three options:
- move to the rescheduled time or date,
- have a gift certificate issued to you or
- to receive a refund to your original form of payment for the purchase price of the class.
Cancellations due to government mandated shutdown may result in rescheduled classes, credit for a future class, or delayed reimbursement. We will handle each situation as needed and contact you with further information when available.

Baking & Pastry Course (12 weeks)

French Pastry: Learn the base dough for éclairs, cream puffs, profiteroles, and gougeres as well as the traditional custard and fruit curd fillings, and foolproof chocolate glaze.
Pies, Tarts, Turnovers, and Mini-Pies: Learn the art of a tender, flaky pie crust and how to marry it with a variety of fillings, from fruit to chocolate. You’ll also learn how to prep pies and tarts in advance, and even ways to use the dough to create simple cookies.
Cakes and Cupcakes: Learn the secrets of mixing, baking, and frosting a variety of cakes as well as tips on how to frost and ice like a pro. You will also learn to prepare loaf cakes, such as pound cake, as well as a variety of icings.
Cookies: You will learn how to recapture the spirit of the perfect cookie, how to make them from scratch, and how to share them with family and friends for years to come. You will learn how to pick the right utensils for the task, how to choose your ingredients, how to ensure the desired outcome, and how to perfect a few little twists on classic favorites.
Donuts, Croissants and Danish: Making a donut run on Sunday morning can be fun but making donuts from scratch is something else entirely. Learn the secrets to making donuts, croissants and Danish at home
Custards, Pavlova, Mousse: Master the many uses of eggs in decadent baked custards, elegant pavlovas, and rich chocolate mousse. You will also begin to learn how to layer components into a multi-part dessert ahead of session three.
Candies and Confections: Learn how to work with sugar across a wide spectrum of final cooking temperatures while making an assortment of confections, like fudge, caramel, and marshmallows.
Chocolate: Learn how to manufacture chocolate, produce candy and confections, use chocolate molds and create professional chocolate recipes. The course also emphasizes tempering chocolate to make classic truffles.
Bread Fundamentals: is an essential start for students who desire to successfully learn the art of bread baking.
