You’ll develop techniques practiced by professional cake decorators such as applying buttercream icing, how to make a rose, level a cake, pour ganache and master a piping bag. From breathtaking designs to whimsy, all the latest cake decorating trends are disclosed, with instructions and ideas about how to bake and decorate the darlings of the cake world, finger licking cupcakes.

With practice and patience, cake decorating can be learned. This exclusive course starts you out with the basics from designing your work space, cake baking, decorating tools, prepping a cake for decorating and many tips of the trade to help you create delectable cakes, icings and fillings. You’ll learn the importance of texture and the temperament of icings, how to avoid cake catastrophes, ways to fix them and still keep your cake looking perfect.

What classes do we offer?

  • Cake Decoration I (Basics & Fundamentals): Join us for a class focusing on creating a pretty cake, using a variety of techniques. The buttercream frosting is already made and the six-inch one-layer vanilla cakes are out of the oven and ready to decorate. This hands-on class will learn how to create a level cake, crumb coat and frost the cake, and finish with a smooth icing. Using a pastry bag and a variety of tips, learn to create dot and shell borders, polka dots, dot flowers, leaves, rosettes, and simple writing techniques. Each student will take home their decorated cake. 
  • Cake Decoration II (Flowers & More): In this continuation class (Cake Decoration I prerequisite), we will cover the following techniques. Vines and leaves, Roses and drop flowers, reverse shell and rope borders, basket weave and practice piping letters. By the end of class you’ll have copied a cake that has already been finished. Each student will take home their decorated cake. 
  • Cake Decoration III (Fondant Cake Covering): Fondant provides a pristine cover for your confectionery creations and a clean canvas to display your other cake decorating skills. In this class, we’ll take you step by step through the process of rolling out fondant and covering round and square cakes. You’ll also cut out and attach buttons and flowers with our easy fondant applique method. Learn to color and flavor fondant and brighten up your cake designs. Each student will take home their decorated cake. 
  • Cake Decoration IV (Cupcake Decorating): Join us for a cupcake decorating class focusing on the frosting and creating exquisite designs, using a variety of frosting, and piping techniques. The cupcakes are out of the oven and ready to decorate, as this hands-on class learns to work with buttercream frosting to create beautiful piped borders, roses, shells and other designs using several different pastry tips. Each student will take home 8-12 cupcakes. 
  • Cake Decoration V (Wedding Cake Class Design and Tiered Cake Assembly): This class is for those who want to make wedding and tiered cakes. The class includes a number of classic wedding piped designs and borders as well as bridal laces, and garlands. In a lecture, the instructor demonstrates how to assemble your cake with structural integrity. We’ll cover the different methods used to make sure your beautiful cake stays upright. In the final session, each student will assemble and decorate a 2 tier wedding cake, with hands on experience in doweling and stacking. We’ll take some pictures of you with your beautiful cake before we help you pack it up to take it home. Prerequisite: Completion of Course 1 & 2 NO EXCEPTIONS.
