If you’ve been working in a kitchen, or have taken an introductory culinary program before, and want to take your next steps to becoming a Professional Chef, then a Culinary Certificate is the right fit for you. This program is designed to help cooks, who work 40 hour weeks and previous culinary students use their existing knowledge and experience, while learning the fundamentals of running and leading a professional kitchen.

Courses of study in the online program concentrate on both theory and application of culinary arts in the following areas:

Culinary Essentials

As the preliminary course, this class covers basic techniques like terminology, seasoning, cooking methods, knife skills, mise en place, and food safety and sanitation.

Baking Essentials

Build your baking skills upon the foundations taught in Basic Culinary. Cover pastries from bake shop staples to international desserts, along with the theory and chemistry of pastry arts. Includes cookies, custards and breads.

World Cuisine

Explore global cuisines, learning the cultural history, key ingredients, cooking styles, characteristics, and recipes of everything from Asian and African to European and Latin American cuisine.

Menus, Recipes and Cost Management

Learn how the menu is used as a financial and communication tool. Covers all aspects of menu planning and design. How do we measure ingredients and portions, convert recipes to different yields, and calculate food cost with the aid of written recipes.

Basic Sanitation and Food Safety

You will study the causes of food-borne diseases and kitchen injuries, and you will learn ways of preventing them. Prevention, of course, is the most important thing to learn. It is not as important to be able to recite the names of disease-causing bacteria as it is to be able to prevent their growth in food. 

Wine, Beer & Spirits

In this course, we will explore the history of alcoholic beverages, responsible alcohol service and regulations that impact the beverage industry. Various types of beverages that make up a successful beverage program including beer, wine, spirits and the art of mixology. 

Hospitality Management

You’ll learn the financial and operations management skills required to operate hotels, restaurants, tourist destinations, travel agency and event planning in the U.S. and around the world. 

Nutrition and Wellness

More and more people are trying to lead healthier lifestyles and nutrition is a vital part of this. After taking this course, you will have an improved understanding of the basics of nutrition. Ultimately, this knowledge will help you provide healthy options for your customers, and more importantly, yourselves.
